Description
Prantha Stuffed With Potato Filling And Paneer Filling
Paneer stuffed paratha is a popular North Indian, protein-rich flatbread made with whole wheat flour (atta) and filled with a savory, spiced, grated paneer (Indian cottage cheese) mixture. Known for being a hearty and satisfying breakfast or lunch option, it features a crispy, golden-brown exterior and a soft, creamy, and savory interior.
- Flavor Profile: The paneer filling is generally mild, savory, and aromatic, often enhanced with spices like garam masala, ajwain (carom seeds), and red chili powder. It is typically tangy due to the addition of dried mango powder (amchur) or chaat masala.
- Texture: The outer layer of the paratha is crisp and slightly flaky (when made with ghee), while the interior is soft, moist, and, according to descriptions, “melts in the mouth”.
- Ingredients: The dough is made from whole wheat flour, while the filling consists of grated or crumbled paneer, coriander leaves, green chilies, and various spices. Onions are sometimes added for a slight crunch and sweetness.
- Serving Suggestions: Traditionally served hot, straight from the griddle (tawa), often with a generous dollop of butter or ghee. It pairs well with plain yogurt, cucumber raita, pickles, or mint-coriander chutney.
Raita/Yogurt
Indian Raita is a versatile, yogurt-based condiment or side dish used across the Indian subcontinent to complement, cool, and balance the heat of spicy, robust meals like biryani, kebabs, and curries. It is made by mixing plain, whisked yogurt (dahi) with raw or cooked vegetables, fruits, pulses, or spices, and is typically served chilled.
Key Components & Texture
- Base: Thickened or normal plain yogurt is the foundation.
- Mix-ins: Finely chopped or grated cucumber, onion, tomato, carrots, or boondi (fried chickpea flour pearls).
- Flavorings: Essential additions include roasted cumin powder, black salt (kala namak), green chilies for heat, chaat masala, and fresh herbs like coriander (cilantro) or mint.
- Texture: Creamy, refreshing, and often crunchy depending on the mix-ins.
